I took some cooked prawns and mixed them with a whole bunch of chopped coriander, a finely diced jalapeno, cucumber, cubed mango, shallot and packet coleslaw left over from last night... not forgetting a spindly homegrown lettuce. For the dressing I mixed about half a jar of mayonnaise with some savoury hot sauce. Add some crispy flat bread and viola - there's your dinner.
This meal came out to about $16 a portion but the lettuce was all profit - imagine how much it would have cost if I had to buy that shit.
