Tofu Rice Paper Wraps (by Biggs)

House and dog sitting for Nancy this week so I took the opportunity to head to her local Vietnamese restaurant for rice paper wraps. Sure, it's technically my local Vietnamese restaurant too but at 100 meters from Nancy's it's hard to resist. Fresh, tasty and satisfying. Felt like they were doing good things to my body.
