Pork Belly and Scallops (by Biggs)

So, the hotel I'm staying at in Rocky is nice but average however the attached restaurant is absolutely sensational. I was absolutely knackered tonight so ordered room service which fortunately came out of that very same restaurant. I was tempted by the lambs brains (I fucking love lambs brains) but got worried about the potential sweats that could result from the food sitting under a room service closhe. So, I went with one of my favourites - pork belly. And a tremendously generous serve at that. I was promised crackling and a perfect crackling was delivered. Satisfying.
