The tortillas are simple. Oven roasted pork belly with a corn, onion, capsicum combo bound in some achiote sauce from a bottle.
I had many grand plans prior to making these tortillas but got lazy and threw all the ingredients in together - that turned out to be a fortuitous and delicious decision.

Pork belly! On a tortilla! G did a perfect job on the pork belly. I could eat that stuff until the cows come home....cause we sure know the pigs aren't going to come home....cause we ate them you see.
